Continuing on our theme of ever-surprising carrot recipes....we've landed on this superb Carrot Margarita.
Now I know what you're thinking. A carrot margarita? No way. But trust us. The blend of carrot, lemon, grapefruit and tequila match perfectly in flavour characteristics and body. The lemon lifts the carrot, and the tequila gives that all needed kick.
The even more surprising thing is that we actually made this with our favourite non-alcoholic spirit; Mockingbird!
Mockingbird Spirit
For those that haven't heard us bang on about it before, Mockingbird is the World's first a-free tequila. Made from Blue Weber agave that comes right from the source in the town of Tequila, Mexico. That means Mockingbird has exactly the same quality that you’d find in any worthy Tequila- but all without the booze.
It also contains a hero-ingredient adaptogen; Ashwagandha, so where alcohol brings you down this will lift you up! Ah, we love it.
Of course, you can always swap it out for a decent tequila Blanco. We tried both versions and we can confirm they are both delicious.

Recipe:
50ml Mockingbird Spirit or Tequila Blanco
5ml Organic agave
25ml Fresh lemon juice
50ml Freshly squeezed pink grapefruit juice
50ml Organic carrot juice
Method:
Pour all of the ingredients into a shaker, add a handful of cubed ice and shake well.
In a short glass, add a large cube of ice and strain over the liquid.
Garnish with a lemon twist.
