Raspberry (ACV) Nojito

You won't find any rum in our take on a moijito, but you will find apple cider vinegar!

Apple cider vinegar has various healthful properties, from antioxidant and antimicrobial effects to aiding in weight loss and reducing cholesterol.

What's more, it's an amazing addition to many cocktails. We've been creating a range of shrubs (drinking vinegars) from all of the foraged fruits we've been gathering lately- with recipes to follow in the coming weeks. For now, however, this recipe simply calls for a tablespoon of apple cider vinegar.

The result is a cocktail that has more depth and complexity, and definitely does not taste of vinegar! Raspberries, mint and a lovely local honey (use organic agave if you are vegan), and you have a delicious refreshing 'no'jito.

Raspberries

What you need:

  • A small handful of garden mint
  • 1 tbs organic apple cider vinegar
  • 1 tbs local honey or organic agave
  • 2-3 organic lime wedges
  • A small handful of raspberries
  • Sparkling water

Apple Cider Vinegar

Method:

In a heavy-bottomed glass add the mint leaves (smack them between your hands first to release the aromas).

Add 2-3 lime wedges, the raspberries, apple cider vinegar and the honey/agave and muddle (use a pestle if you don't have a muddler).

Fill the glass with crushed ice and fill it halfway with soda. Use a spoon to mix the drink thoroughly, getting everything from the bottom. Top with more soda and garnish with a slice of lime, a sprig of mint and some berries.
