Healthy Piña Colada

SPRING is here, and we're back with our healthy cocktail recipes.

Last weekend we spent some time in the garden, the sun was shining and we had that twinge of excitement in anticipation for British Summer. 

You probably know by now that we love using seasonal produce in our recipes, especially those items grown locally- but, the thought of sunshine, beaches and Piña Coladas sprung to mind. A quick trip to the local supermarket resulted in a haul of some (not very local) coconut water and fresh pineapple. The result was a tropical cocktail that seemed oh-so naughty but was very healthy, creamy and uber-delish.

Coconut water is perfect if you're feeling a bit run down. In Hawaii, it's well known as a hangover cure due to its naturally occurring isotonic and high levels of potassium and magnesium.

Vita Coco has released a new style of coconut water which we found in our local supermarket. It caught our eye with its Great Taste award-winning label. If you haven't tried it, it's a pressed version which has added pressed coconut, meaning it's a slightly sweeter, creamier version with more of a coconut taste; the perfect match for a yummy Piña Colada.

We had it without alcohol, but a spot of coconut rum would only add to the deliciousness!

Check out the recipe below- it's super simple, and it's a keeper for the Summer months.

Ingredients:

  • 125ml pineapple juice (fresh if poss)

  • 125ml Vita Coco Pressed Coconut Water

  • 12ml fresh lime juice (just a squeeze)

Recipe:

It's as simple as adding all of the ingredients into a cocktail shaker (or jam jar with lid), shaking with ice until a layer of condensation forms on the shaker, and pouring over cubed or crushed ice.

Garnish with a lime wedge, pineapple leaf or edible flower if you are feeling tropical.

Variations:

-Blend with a couple of frozen pineapple cubes for a frozen cocktail

-You can play around with the ratio of pineapple/coconut depending on what you like

Note: Fresh pineapple juice makes all the difference, and you don't need expensive equipment. We have a basic Phillips juicer at home that's about £40 brand new (we actually purchased it secondhand from Facebook marketplace for £10). It's positively wonderful for juices, cocktails and little immune-boosting shots, so we'd thoroughly recommend investing!
