Breakfast Marmalade
The perfect combination of spice, sweet, citrus and bitter.
Created by Salvatore Calabrese in 1996 at London's Lanesborough hotel.
Although the idea came to him whilst having breakfast with his wife when he fancied something other than his morning espresso.
A lighter marmalade is better (less rind), and depending on the type you use, you may need to alter the amount of lemon juice to balance the sweetness.
Salvatore recommends stirring in the marmalade, and contrary to many recipes- don't fine strain it. That way you get all the flavours and mouth-feel from the marmalade.
Recipe:
25ml Lemon Juice (freshly squeezed)
25ml Cointreau
50ml London Dry Gin
1 tbs Orange Marmalade (good quality)
Glass: Martini glass
Garnish: Orange Zest
Method:
Chill the glass. Pour ingredients into a shaker. Add the tablespoon of marmalade and stir vigorously.
Add a handful of ice, shake and strain.
Garnish with flaming orange zest (or toast!)
