Cacao nibs are tasty little morsels packed with an impressive amount of nutrients, and are super versatile!
We've had so much fun over the past few weeks infusing all kinds of spirits, from vodka to coffee liqueur, creating our own cacao blanc and in this case, infusing Campari.
A small number of cacao nibs gives instant flavour when shaken, and when allowed to steep in the spirit for just a few days, can transform any cocktail recipe.

We created this cocktail after hearing many months ago about a cocktail called the Psycho Killer, created by Jillian Vose for the amazing (and regularly voted best bar in the World) Dead Rabbit in New York. In her recipe, she infuses Campari with cacao nibs. With Whiskey, absinthe and banana liqueur it's a cocktail we're looking forward to trying s- but in the meantime, we settled for a delicious take on the Boulevardier.

As a simple example, a Boulevardier is like a Negroni but with Bourbon or Rye instead of Gin.
Give this a go if you fancy a nice strong cocktail to sip on. It's naturally low in sugar,
2 tbs Cacao Nibs
30ml Cacao Nib Infused Campari
30ml Bourbon (we used Woodford Reserve)
30ml Red Vermouth (we used the semi-sweet In The Loop Vermouth No 23)
A few hours before, infuse your Campari with the cacao nibs. We made just a small bottle (pictured), and tasted a small amount each day. On the 3rd day it had made the Campari even more bitter (something we didn't think was possible!) So anything from 2 hours to 24 is going to be ideal.
Feel free to taste throughout, and once you are ready, strain out the cacao nibs.
Add all of the ingredients into a mixing glass with ice and stir for 10-20 seconds.
Pour into a glass with a large ice cube or sphere, add an orange wheel or an edible flower (or in our case, both!)
